I had a pizza over the past weekend and the bottom and crust were done to perfection. Each bite was crunchy on the bottom but still chewy as the dough should be. It was the best pizza I’ve had in a long time.
So far, it’s been a boring food week. But I can do a very mean set of fried eggs anyway you want them. My preference is over medium lightly seasoned. And I bought some awesome rye bread. Rye bread and eggs are really good. But I also made some pretty awesome salmon so maybe it’s a
@Kyeh@unksol well it didn’t ask what was it it just said was it so I responded accordingly. And it’s because for some reason it wouldn’t let me continue it’s like it had as many texts characters as it wanted to probably related to the device I was on. I was going to say something maybe it’s a wash maybe it’s a tie maybe it’s a crap shoot. Basically my salmon was really good my eggs are always really good so I just figured I’d leave it up to people’s imagination
@Cerridwyn@unksol I’m feeling too lazy to make that but maybe I’ll have some eggs now. How do you cook your salmon?
(I’ve never used voice-to-text but I’ve seen some amusing results from it.)
@Kyeh@unksol mostly I fry it in a little bit of olive oil. With whatever seasoning I want. Sometimes I bake it but I like the outside crispy and I’m not very good at crisping something in the oven. Or maybe it’s my oven. I’ll get up piece at the farmers market that’s probably about 3/4 of a pound. And I’ll cook it and eat it over three servings the first one hot sometimes I’ll reheat piece two or three and sometimes I’ll eat it cold with a salad
@Cerridwyn I like salmon, but I rarely buy it for a variety of reasons. Yes, the fact that it’s expensive is one of them. I use a number of methods of preparing other kinds of fish. I make a halfway decent English style battered fish fillet, my partner makes fish tacos that are very good, and sometimes I’ll just wing it and do my usual “What’s in the fridge?” improvisation. Those are not always complete successes, but a number of them have been. And sometimes I even remember to take notes so that I can duplicate them. Sometimes. You know how it goes.
@Cerridwyn@f00l@Kyeh@unksol
When I cook fresh salmon, I make a paste of soy sauce, pressed garlic and ginger to smear on the skinless side, then put it in the oven until it is just done in the center. (If the weather permits, I’ll cook it on my Traeger wood-fired grill for some additional smokey flavor.) Yum!
The next morning, leftovers (if any) are flaked and mixed with beaten eggs to form patties, then fried in a skillet. Double Yum!
@f00l@Kyeh@macromeh@unksol i’m good as long as it is done, paste sounds yum. i find in the oven it is sometimes too wet, even when it is technically done.
i have this made for bacon seasoning i bought up in Sonoma at the cheese festival a couple years ago that was yummy on salmon, orange based and not powdery but likely a bit sugary to eat all the time. it was seriously good.
@cbilyak@Cerridwyn@Kyeh@unksol
Cooked salmon a couple of days ago with a Dijon, olive oil, lemon, fresh garlic and parsley based sauce spread over it. It was seriously yummy too.
Sreved it with some Reisling and a couple of ears of fresh corn (first of the season). They were markedly good. Was going to smoke the salmon but was too lazy to set up the smoker.
A friend gave us home made mac & cheese, soup, and bread. Everything was wonderful! I have never had mac & cheese that made me want to make it from scratch. Until now. https://tonisrecipes.com/creamy-mac-and-cheese-2/
My friend is visiting and she has pretty much done all the cooking. Anything I don’t have to cook is great. I hate to cook. When the kiddo lived here I cooked because DHS would have taken a dim view had I not… and (I think I have mentioned this before) when she was being a real teenaged ass hat I once told her there were good reasons why some species eat their young. She informed me that because I hated to cook I wouldn’t know how to cook her. I told her there was always the internet.
At today’s family Ihop brunch, I had Eggs Benedict with lots of bacon onion jam. Eggs were soft, bacon was plentiful, muffin was tender and chewy, and Hollandaise was adequate. Now I want a jar of that jam.
I just finished an Ataulfo mango. Like mango dipped in honey with a drop of lemon juice.
Shocked to find fresh corn on the cob in Walmart and further shocked that it was pretty good for how early it is.
@fjp999 WAY too early.
@ChadP I know, right! But here we are.
@ChadP @fjp999 but where did it come from? It is impossible to have sweet corn from the US.
@ChadP @unksol Only the big W knows for sure. I am just happy to have sweet corn now.
@ChadP @fjp999 @unksol
Alabama, evidently: https://meh.com/forum/topics/food-its-good#661bdcfff53ebd7724c7f99c
@ChadP @fjp999 @Kyeh @unksol There’s plenty of it coming up from the Rio Grande valley here in Texas.
Chocolate decadence cake
Just my normal foods this week. Chips and salsa are tied with pizza in this battle.
Made it for Beer Wine and Burger night this week at the Roycroft Inn in Buffalo. Always a treat!
Lunch was tuna salad on fried seven-grain bread. Yum.

POPSOCKETS! ROAD ROCKETS! SONNY CROCKETT! AWESOME!
@Cerridwyn
Well, was it?
@Kyeh yes
@Cerridwyn @Kyeh I think the question was “a what?”
Since there was no list, didn’t end with A.
Just… Ended mid sentence
@Kyeh @unksol well it didn’t ask what was it it just said was it so I responded accordingly. @Cerridwyn @unksol I just thought it was funny. Now I want salmon eggs Benedict…
@Kyeh @unksol Well then, time to go make some. ( I am not a fan of this new AI voice to text. It doesn’t always recognize punctuation properly)

@Cerridwyn @unksol Fish at the farmer’s market! Another perk of living in CA, obviously.
@Cerridwyn @Kyeh @unksol
Everyone who likes salmon should check out Stephen King’s minimalist preparation method.
Never tried it, but said to be excellent.
@Kyeh @unksol yep yep. Well pacific coast states. Almost everybody knows there’s a fish market at pikes
@f00l @Kyeh @unksol it would probably work. But it wouldn’t be crispy and I like my salmon crispy
@Cerridwyn @unksol
@f00l - What is it?
@Cerridwyn @unksol I LOVE Pike Place Market; well, I haven’t been there in ages, but I did.
@f00l @Kyeh @unksol basically season it rap it in paper towel and put it in the microwave
@Cerridwyn @Kyeh @unksol
I think wrap it with massive amounts of butter as well as seasoning in the wrap.
Don’t forget the butter!

@Cerridwyn @Kyeh @unksol just made salmon yesterday! I put soy sauce on it and cook it in the air fryer, so yummy!
@cbilyak @Kyeh @unksol sounds delish. Do you just use straight soy sauce or do you use soy sauce the basis of a marinade/sauce

Pigged out at a fav Tex-Mex recently after not eating that way for months.
Stuffed to the gills afterward.
But … Aaaaah.

@OldCatLady That sounds delicious!
/showme a gallon of bacon onion jam in a glass jar
For my answer I’ll behave, even though I don’t want to.

@OnionSoup
and when it’s good it’s VERY good.
